Wine is a surprisingly complex chemical mixture of water and ethanol (97%) mixed with thousands of different molecules ranging from acids and sugars to phenolic and aroma compounds. Understanding this chemistry is a tool that enables winemakers to ensure both quality and consistency in wines while also allowing us to assess and resolve any problems that may arrive during the winemaking process. Enologist Rachel Bordes will take you through the process to experience firsthand the distinct differences in texture, mouthfeel, and flavors, which is ultimately affected by the chemistry behind the wine.
